What led you to join Cocone?
Most company cafeterias at large companies are basically outsourced, but at Cocone, the cooks are directly employed and treated as part of the company. That was the deciding factor.
In the outsourcing process, the employees are basically very distant from each other. When you go through an intermediary, everything from the recipe to the budget is already decided, so it is impossible to respond directly to the desires and requests of each individual eater. For me, this is very frustrating. ……

I find it rewarding when I am standing at the deli serving counter and I see people looking happy and enjoying their food. I am always thinking about how to make people happy.
The hard part is that I have to keep to a strict schedule. Time ” the most important thing in this job. I have to be very careful, especially during lunch time, because I don’t want to disrupt the precious time of my employees. If I run overtime, even by a little bit, it is really frustrating!
What do you value in your work?

I guess it’s like ” what I myself value when I cook.
We don’t treat the recipes for the food we serve at the Coconnel Deli as something that is so cut and dry that you are not allowed to stray from it. It’s more like the process is outlined to a certain degree, and there is not a lot of measuring of ingredients.
But that is very important to me, and it makes me happy. Rather than being bound by a recipe, I feel that it is better to trust my “sensibility” and create a flavor that I think ” everyone will enjoy ” on the spot, rather than being bound by a recipe.
Do you have any advice or message for those who are currently considering joining the company?
Living alone, it may be difficult to cook and eat many foods that are too complicated to eat, but Cocone Deli serves meals that can cover such biases.
The amount of work we do is quite substantial, so we sometimes get comments like, ” I’ve gained weight since I joined the company! I have a gym, so I hope you will do your best to keep a good balance there. …… (lol)
